The company I work for has a yeast expert who does all kinds of experimental work. He also had about 30 slants of various beer yeasts that were frozen. I can't give you info on how to get the yeast frozen for storage, but I can tell you that those slants will be basically worthless in about 5 years as the yeast will eventually die off. I have been using organic 2-row and Crystal 60L malts lately with great results. I believe it is Briess at my LHBS. It crushes very well, and has a smooth flavor.
